MINT SAUCE

MINT SAUCE (2)

Mint sauce is a sauce traditionally made from finely chopped mint leaves, soaked in vinegar and a small amount of sugar. Occasionally, the juice from a squeezed Lime is added, but, in this recipe by Sally Clarke the addition of shallots, and using Balsamic makes for an interesting combination

INGREDIENTS

150gr Shallots
45ml Balsamic Vinegar
90ml Olive Oil
Salt and pepper
6 tablespoon chopped mint

<METHOD

Mix all the ingredients together except the mint, and, allow to infuse for at least 30 minutes. Add the mint, taste for seasoning, and serve.
