MEDITERRANEAN STYLE COD

This Mediterranean Baked Cod Recipe is the perfect, healthy meal! The whole meal bakes in one pan and takes about 20 minutes to prepare.

INGREDIENTS
4 Cod Fillets
2 tablespoon extra virgin olive oil
300gr of cherry tomatoes halved
1 small red onion
3 garlic cloves crushed
90gr Kalamata olives pitted and halved
2 tablespoons capers drained
1 teaspoon oregano
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
Juice of 1 lemon
2 tablespoons chopped parsley
122gr of Feta cheese
METHOD
Preheat oven to 200⁰C
Lightly Greece a 22cm x 33cm  baking dish
In a bowl combine  the tomatoes, red onion, garlic, olives, capers, organon paprika, and 1 tablespoon of the olive oil. Toss well
Place the cod into the baking dish, drizzle over the remaining oil, season with salt and pepper.
Spoon the tomato mixture over and around the cod
Squeeze over the lemon juice.
Bake for 25 minutes.
Sprinkle over the parsley and the feta cheese.
Serve immediately.
