GREEK LEMON POTATOES.

Greek Lemon Potatoes are definitely a cut above the usual roasted potatoes! The unique thing about these Potatoes is that they are cooked in a heavily flavoured lemon garlic broth so they suck up all those delicious, flavours, before roasting to golden perfection.

INGREDIENTS

1.2 kg potatoes ( Maris Piper)
375 ml chicken stock
125 ml olive oil
85 ml lemon juice
5 garlic cloves  crushed
1 tablespoon dried oregano2 teaspoon salt

METHOD

Preheat oven to 200⁰C

Peel potatoes and cut into thick wedges about 3 cm

Place potatoes in a roasting pan with all the other ingredients. Toss well.

Roast for 20 minutes. Turn potatoes, then  roast for a further 25 to 30 minutes until the liquid is mostly absorbed by potatoes/evaporated and you’re left with mainly oil in the pan.
