Prosciutto wrapped pork tenderloin: It’s one of those gem recipes that is so good and yet so easy. Wrap it, place on top of the Greek potatoes, cook it, sorted!
INGREDIENTS Serves 5
750 g Pork tenderloin cut into 5 even sized pieces
½ teaspoon salt
¼ teaspoon black pepper
5 slices of prosciutto
250g cherry tomatoes
1 tablespoon extra Virgin Olive Oil
METHOD
Preheat oven to 200⁰C
Sprinkle the pork with the salt and pepper. Wrap each piece of Pork with a slice of prosciutto, finishing the the seam side down. Set aside
Once the potatoes are cooked, remove the pan from the oven. Place the Pork on top of the potatoes seam side down. Scatter the cherry tomatoes round the pan. Drizzle over the olive oil.
Baked for 25 to 35 minutes.
Rest for 5 minutes then serve pour over the pan juices.
