PANEER, ONION, CHILLI AND GARLIC NAAN PIZZA

Paneer Naan Pizza is and Indian inspired vegetarian pizza with paneer and spices A fun and easy pizza to make. Enjoy a super speedy pizza, making them a tasty vegetarian treat midweek.

INGREDIENTS

2 Naans (M & S ones are fine)
4 Garlic cloves
1 Small red onion
2 red Chillies finely chopped
100g Paneer cut into small cubes, or a round of Mozzarella
2 tablespoons Olive oil2 tablespoons Parmesan cheese

For the sauce

2 tablespoon olive oil
2 cloves of garlic crushed
2 tablespoon Chopped Coriander Stalks
1 400g tin of chopped tomatoes
Salt and Black pepper

METHOD

Preheat the Oven to the highest setting

For the sauce, heat the olive oil in a saucepan and add the garlic. Allow the oil to take on the flavour of the garlic for a couple of minutes then add the coriander stalks. Fry for a further minute, then pour in the chopped tomatoes.Season to taste

Simmer the sauce for 15 minutes, until the sauce thickens.

When the oven comes up to temperature . Spread the sauce over the Naans Top with the finely chopped garlic, red onion, chillies, and ,the cheese. Place the Naan straight onto the oven racks.
Cook for 5 minutes, but keep your eye on it,  it may need longer.

Drizzle the top with a little Olive oil and sprinkle with the Parmesan;
