AN INDIAN SLAW

A fresh, colourful slaw is the perfect side to spicy curry, and this Indian-inspired version is a great twist on a classic coleslaw. Mix crunchy veg with a sharp a mayonnaise and chilli jam dressing. Stir through and enjoy with your favourite feast.

INGREDIENTS  Serves 6

Half a red onion
half a red cabbage
half a red pepper
40g Pomegranate seeds
8 mint leaves
25g Coriander leaves
3 tablespoons Mayonnaise
3 teaspoon TOMATO CHILLI JAM

METHOD

Slice the red onion into very fine slices and drop into a bowl of cold water.

Shred the cabbage as finely as you can. Place in a bowl

Slice the red Pepper into thin long slices  and add to the bowl along with the pomegranate seed. Slice the mint into ribbons and add to the bowl.

Tear up the coriander and add to the bowl

Drain the red onion pat dry and add to the bowl.

Add the Mayonnaise and the chilli jam and toss well;
