PAN FRIED PORK CHOPS WITH CAPERS AND SOY BUTTER SAUCE

 This is one of the best pork chops recipes with capers and soy sauce butter.   It was one of our favourite dishes for the summer of 2019. Back in the day when we had visitors. It’s tasty and so easy to prepare.

INGREDIENTS.

4 thick pork chops (about 250gr)
1 fat garlic clove
2 tablespoons olive oil
2 tablespoons Cider vinegar
2 teaspoons soy sauce
25g chilled butter cut in small pieces
100 gr rocket
2 teaspoons capers
Salt and pepper

 

METHOD

Preheat oven to 180°C

Thinly slice the garlic into slivers. Make a few incisions into the fat of each chop and push in the garlic.  Salt and pepper both sides.

Heat the olive oil in a large pan until smoking. Add the chops, and lower the heat slightly, and cook them for two minutes on each side until nicely coloured. Transfer the pan to the oven and roast them for 8-10 minutes…  

When  cooked turn off the oven,  transfer the chops to a plate, cover loosely with foil, and place back in the oven to keep warm.

Place the frying pan back over a high heat, add the cider vinegar and soy sauce. Keep moving a wooden spoon around the pan to release all the juices. Whisk in the butter and set aside.

To serve divide the rocket between 4 plates, put a pork chop along side. Spoon the sauce over the chops and rocket. Sprinkle over the capers.

Serve with crushed new potatoes, or pureed potatoes, and a handful of Rocket
