PIZZA CHICKEN

A delicious Italian-inspired dinner idea, Slimming World pizza-topped chicken combines a succulent chicken breast with the taste of cheesy pizza

INGREDIENTS

4 small chicken breasts flattened
300g Passata
2 tablespoons tomato puree
100g mozzarella grated
1 clove of garlic crushed
1 teaspoon dried Basil
1 teaspoon dried oregano
Salt and pepper
Olive oil
1 teaspoon sugar
Flat leaf parsley

METHOD

Preheat oven to 200⁰C

In a bowl mix Passata, tomato puree, garlic, basil, sugar, and oregano. Set aside.

Season one side of the chicken. Heat a frying pan on medium heat. Add a tablespoon of olive oil. When hot add the chicken to the pan seasoned side down. Cook for 3 minutes.

Season the top, then turn over and cook for another couple of minutes transfer to an oven proof dish.

Pour the sauce over the chicken, and scatter over the cheese

Bake until the cheese is melted and the chicken is cooked through . Around 10 minutes.

To serve, sprinkle over the parsley. We served it with olive oil and garlic toast.
