POMMES DE TERRE SARLADAISES

Pommes de Terre Sarladaises is an iconic French potato dish made of only three ingredients: potatoes, garlic, and fat. They are an absolute treat, with the nutty, velvety richness of duck fat, and the beautiful contrast between the tender middle of the potatoes and the browned crunchy bits.

INGREDIENTS

1 kg potatoes
5 tablespoons duck fat (mine was runny, at room temperature, so the spoonfuls were level)
4 garlic cloves
4 tablespoons of parsley
1 pinch of salt

Peel the potatoes, wash them and cut them into thin slices 3 to 4 mm. Put them in a kitchen towel or absorbent paper and dry them well to remove the starch. Wash and chop the parsley, peel and chop the garlic.

In a frying pan, put 3 tablespoons of duck fat. Heat over high heat and when it starts to crackle, add the potato slices. Brown over high heat for 12 minutes, until the slices are nicely colored. Then add 2 tablespoons of duck fat, mix and cover. Let cook for another 10 minutes. Add the garlic, parsley, mix and cook for 5 more minutes. Season and serve. voila!
