PORK TENDERLOIN WITH BACON AND PRUNES

A pork roast always looks very festive on the table, Summer or Winter. The preparation of this pork is very simple, but, you will be rewarded with super tasty Pork. Balanced with the sweetness of the prunes and smoky bacon: Delicious

INGREDIENTS

8 dried prunes
800g pork filet mignon
10 smoked bacon thin slices
butter
olive oil
rosemary (a few sprigs)
salt
pepper
METHOD

Preheat the oven to 180°C.

Cut the prunes in half.

Salt and pepper the pork tenderloin.

Surround the meat with slices of bacon. Brown the filet mignon on all sides in a skillet with very hot butter.

Drizzle a generous drizzle of olive oil in a baking dish. Transfer the meat to this dish. Arrange the prunes and rosemary around the meat. Salt, pepper and drizzle with olive oil.

Bake for about 20 minutes, or until the meat is cooked through.

Cut the meat into thick medallions. Serve with the prunes and a little cooking Juices.
