Let’s consider the humble courgette:-
To start with it’s incredibly easy to grow, ideally sited in a well manured plot, and watered regularly, you will be rewarded with a bumper crop.
The first time we planted courgettes in our potager: 10 plants offered for 2’50€ seemed a bargain not to miss. Believe me 10 plants are 5 plants too many
That year we were inundated, and, before long small tasty courgettes with flowers attached grew overnight into monsters!!! In fact you just had to turn your back and wooooosh another would appear blotting out the landscape ……. Ideal if you wanted something to change into Cinderella s coach!
So after a few years of experience we settle for 5 plants and have developed our repertoire of recipes to make the most of the crop.
One of my favorite recipes is GOURGETTE AND HERB FILO PIE. It is so light and tasty
A Summer lunch can be lifted with small griddled courgettes and broad beans, dressed with a feta cheese, a little olive oil, lemon and chopped herbs (parsley, mint, basil etc.) results in a tasty salad. GRIDDLED COURGETTE SALAD
One of our recent addition to our Courgette collection is ROASTED COURGETTES WITH PARMESAN They are on the menu at least once a week, and are an healthier alternative to chips

Several soup recipes from Lindsay Barnams brilliant book “A celebration of Soup” make use of courgettes when they become a little on the large size. We have two we regularly make. One with the addition of Parmesan and the other mint. COURGETTE AND MINT SOUP Both can be served warm or cold. In fact we freeze some courgettes to add to soups during the Winter. A delicious way of using all your surplus courgettes is a Courgette Pickle – a small jar can easily disappear at lunch time! SWEET AND SOUR COURGETTE PICKLE
