FRESH BERRIES IN ORANGE AND CARAMEL SYRUP

 

Caramel and oranges might seem like an unusual combination, but together, the flavours sing.

INGREDIENTS Serves 4-6

500g mixed berries: Strawberries, Raspberries, Blueberries, Blackberries
250ml Freshly squeezed orange juice
5 tablespoons caster sugar

Orange flavoured whipped cream

300ml double cream
2 tablespoons caster sugar
the grates zest of 1 Orange

METHOD

Heat the orange juice to boiling point.

Heat the sugar in a pan over a low heat, and keep your eye on it as it becomes liquid and gradually turns into caramel. Don’t let it go too dark, else it will taste bitter
Take the pan off the heat for a moment then gradually pour in the hot orange juice, stirring vigorously to, dissolve the caramel. Put back on the heat for 3-4 minutes stirring all the time until the caramel as completely dissolved. Pour in a jug and keep in the fridge

Prepare the fruit, cut any large strawberries in half, if using. Now serve the berries in a bowl, and pour over the orange caramel syrup.

Whisk the cream with the sugar and orange zest. Serve on top of the fruit.
