PIMMS JELLIES

 

June 2nd 2022. The queen’s platinum jubilee.

The perfect boozy dessert for a summer’s day! And the perfect end to our Jubilee banquet.

INGREDIENTS

125 g caster sugar
200 ml water
Pared zest of 1 lemon
Pared zest of 1 orange
5 gelatine leaves
200 ml Pimm’s No 1
200 ml lemonade

Chopped strawberries, cucumber and orange to decorate, and mint leaves to garnish

METHOD

In a small pan, gently dissolve the caster sugar in 200ml water with the pared zest of a lemon and orange and simmer for 2 minutes.

Strain into a jug with the gelatine leaves (pre-soaked in water for 5min); stir until dissolved.

Add the Pimm’s No1 Cup and lemonade, and pour into 6 serving glasses.

Leave to cool for a while then add the chopped strawberries, cucumber and oranges.

Chill until set and decorate with fresh mint leaves.

Serve more strawberries on the side.
