It’s hot outside, so let’s think pesto.  Pesto is one of my absolute favourite sauces. It tastes fresh, herbal, nutty, garlicky and luxurious, all at once. Sue and David (my Sister and husband) were here during the really hot weather, and what did I serve? Of course Pesto.   Wiz and Go…

Other wiz and go recipes   Uncooked tomato sauce

Ingredients

500 gr. spaghetti
36 basil leaves
3 cloves garlic
150 gr pine nuts
100 gr freshly grated mixed pecorino Romano and Parmesan cheese
200 ml olive oil
salt and black pepper

 

Method

Place clean, dry basil leaves in food processor together with garlic. Turn on the machine and gradually add the nuts, then cheese and olive oil. Add salt and black pepper to taste.

Bring water for pasta to boil. Place pasta in water and cook until al dente.

Drain pasta reserving about 3 tablespoons of the water.

Mix the water with the pesto then mix the pesto with pasta.
